A Night of Chocolate, Wine, and Love

Monday morning — still smiling

Friday night was something special.

We had the privilege of serving a pre-reception celebration in honor of Cyrus and Sonia — a couple who brought together two families, two stories, and a room full of people ready to toast their future.

The event took place on Friday evening, surrounded by soft music, the clink of glasses, and the kind of excited energy that only happens before a wedding reception. Guests arrived knowing they were in for a pairing. They left saying it was unforgettable.

The Pairing Menu

We worked closely with the wine makers at Al Borgo Estates to create a tasting journey that moved from light and floral to deep and smoky. Every course was designed to let both the wine and the chocolate shine.

Here’s what we served — and how it went.

🥂 Welcome: Moscato Rosa + White Chocolate Strawberry & Floral Crunch

The evening opened with Al Borgo’s gently sweet Moscato Rosa, all rose petals and raspberry. We paired it with our White Chocolate Bonbon (Strawberry Pâte de Fruit + ganache) and our Crunchy White Chocolate Bar infused with edible flower.

🍷 Second Pour: Nobillisimo + Ruby Cherry Pistachio & Caramel Almond

Nobillisimo is bold and smooth — a wine with presence. We answered with our Ruby Chocolate Bonbon (Cherry Pâte de Fruit + Pistachio Gianduja) and our Caramel + Almond Gianduja Bonbon.

The cherry and pistachio echoed the wine’s dark fruit notes, while the caramel almond brought out a hidden toffee richness. This was the course where people started taking notes.

🍇 Third Pour: Pinot Noir + Dark Chocolate Mango Passion & Milk Crunch

Pinot Noir is bright and silky, so we gave it something unexpected: our Dark Chocolate Bonbon with Mango + Passion Fruit. The tropical acidity sang against the wine’s red berry softness. We also served our Crunchy Milk Chocolate Bar — a guest favorite.

🔥 Finale: Baco Noir + Milk Raspberry Cashew Caramel Bonbon & Chocolate Cake

And then, the grand finale.

Al Borgo’s Baco Noir is earthy, smoky, and bold. We brought out our Milk Chocolate Bonbon (Raspberry Pâte de Fruit + Cashew Gianduja with Caramel Gold Chocolate) — our most complex bonbon — alongside slices of Eliya Chocolate Cake.

The raspberry popped against the wine’s dark fruit. The cashew gianduja and caramel gold chocolate melted into every sip.

What Made the Night Special

Beyond the pairings, what we’ll remember most is the feeling in the room.

Guests didn’t just taste — they listened. They read the “Chocolatier’s Suggestion” cards we placed at each table. We saw couples feeding each other bonbons. This wasn’t just a tasting. It was a celebration of two families coming together — and we were honored to be part of it.
